1 cup semi-sweet chocolate chips

1/2 cup unsalted butter, cubed

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/4 teaspoon salt

For the Peanut Butter Filling:

1/2 cup creamy peanut butter

1/4 cup unsalted butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

For the Chocolate Ganache Topping:

1/2 cup semi-sweet chocolate chips

1/4 cup heavy cream

Instructions
 

Prepare the Brownie Base:

    - Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.

      - In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 30-second increments, stirring until melted and smooth.

        - Stir in the granulated sugar until well combined, then add the eggs, one at a time, mixing thoroughly after each addition.

          - Add the vanilla extract and mix well. Gently fold in the flour and salt until just combined.

            Bake the Brownie Bites:

              - Spoon the brownie batter into each muffin cup, filling them about 2/3 full.

                - Bake for 10-12 minutes or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).

                  - Allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

                    Make the Peanut Butter Filling:

                      - In a medium bowl, beat together the creamy peanut butter and softened butter until smooth.

                        - Gradually add the powdered sugar and continue to mix until fully combined. Stir in the vanilla extract.

                          - Once the brownie bites have cooled, use your thumb to make a small indent in the center of each brownie.

                            Fill with Peanut Butter:

                              - Using a small cookie scoop or a teaspoon, fill each indent in the brownie bites with the peanut butter mixture, leveling off the top.

                                Prepare the Chocolate Ganache:

                                  - In a small saucepan over low heat, combine the chocolate chips and heavy cream. Stir continuously until melted and smooth. Remove from heat and let it cool slightly.

                                    Top with Ganache:
