2 cups cooked and shredded chicken (rotisserie or grilled)

3 cups cabbage (Napa or green), thinly sliced

1 cup carrots, grated

1 red bell pepper, thinly sliced

2 tablespoons rice vinegar

2 tablespoons sesame oil

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon fresh ginger, grated

1 clove garlic, minced

1 teaspoon chili flakes (optional, for heat)

Instructions
 

Prepare the Chicken: If using a rotisserie chicken, shred the meat from the bones and place it into a large mixing bowl.

    Combine Vegetables: Add the shredded cabbage, grated carrots, red bell pepper, snap peas, chopped green onions, and chopped cilantro (if using) into the bowl with the chicken. Toss these ingredients together gently to combine.
