Ingredients
  

2 cups uncooked pasta (shells or rotini work great)

1 cup dill pickles, diced (plus extra for garnish)

1/2 cup red onion, finely chopped

1/2 cup sweet bell pepper, diced (any color)

1/2 cup celery, diced

1 cup cherry tomatoes, halved

1 cup mayonnaise

2 tbsp pickle juice (from the pickle jar)

1 tbsp Dijon mustard

1 tsp garlic powder

1 tsp dried dill weed

Salt and pepper to taste

Fresh dill for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside in a large mixing bowl.

    Prepare the Veggies: While the pasta is cooking, chop the dill pickles, red onion, bell pepper, celery, and cherry tomatoes. Add all the chopped vegetables to the bowl with the pasta.

      Make the Dressing: In a separate bowl, mix together the mayonnaise, pickle juice, Dijon mustard, garlic powder, dried dill, salt, and pepper. Whisk until smooth and well combined.

        Combine: Pour the dressing over the pasta and vegetable mixture. Stir well to coat everything evenly.

          Chill: Cover the bowl with plastic wrap and refrigerate the salad for at least 1 hour to let the flavors meld together.

            Serve: Before serving, give the pasta salad a good stir. Taste and adjust the seasoning if necessary. Garnish with extra diced pickles and fresh dill if desired.
