250g pasta (penne or fusilli works best)

200g chorizo, diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 can (400g) diced tomatoes

200ml heavy cream

1 tsp smoked paprika

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and diced red bell pepper, cooking for an additional 2 minutes until fragrant.

      Add Chorizo: Increase the heat to medium-high and add the diced chorizo to the skillet. Cook, stirring frequently, until the chorizo is browned and crispy, about 5-7 minutes.

        Create the Sauce: Pour in the can of diced tomatoes (with juices), heavy cream, smoked paprika, and dried oregano. Stir well to combine and let it simmer for 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing it in the creamy chorizo sauce until well coated. Let it heat together for another 2-3 minutes.

            Serve: Remove from heat, garnish with fresh parsley, and serve hot with a sprinkle of grated Parmesan cheese on top.
