1 pound breakfast sausage, casings removed

6 large eggs

1 cup whole milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (red and green)

1 cup diced onion

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

4 cups cubed bread (preferably day-old baguette or sourdough)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and crumbled, about 5-7 minutes. Drain excess grease if necessary.

      Sauté Vegetables: Add the diced onions and bell peppers to the skillet with the sausage. Sauté for another 3-4 minutes until they're soft. Remove from heat and let it cool slightly.

        Mix Eggs and Milk: In a mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until well combined.

          Combine Ingredients: In a large baking dish, mix together the cubed bread, sausage, and sautéed vegetables. Pour the egg mixture over the top and gently fold to combine, ensuring that the bread cubes are soaked well with the egg mixture.

            Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the casserole is set and the cheese is bubbly and golden.

                Cool and Serve: Let the casserole cool for about 5 minutes before slicing. Garnish with fresh parsley if desired.
