4 large carrots, grated

1/4 cup fresh parsley, finely chopped

1/4 cup raisins (or cranberries for a twist)

1/4 cup walnuts, chopped

1/2 small red onion, finely sliced

1 tablespoon extra virgin olive oil

2 tablespoons freshly squeezed lemon juice

1 tablespoon Dijon mustard

1 teaspoon honey (or maple syrup for a vegan option)

Salt and black pepper to taste

Instructions
 

Prepare the Vegetables: Peel and grate the carrots using a box grater or food processor. Place the grated carrots in a large mixing bowl.
