1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

4 slices of thick bread (such as brioche or challah)

1 egg

1/4 cup milk

1 cup crushed graham crackers

1/2 teaspoon cinnamon

Oil for frying

Whipped cream and additional strawberries for garnish (optional)

Prepare the Cheesecake Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Fold in the sliced strawberries gently, being careful not to mash them. Set aside.

    Assemble the Sandwiches: Take two slices of bread and spread a generous amount of the cheesecake filling on one slice. Top with another slice of bread to create a sandwich. Repeat with the remaining bread and filling.

      Prepare for Frying: In a shallow dish, whisk together the egg and milk until fully combined. In another shallow dish, mix the crushed graham crackers with the cinnamon.

        Coat the Sandwiches: Dip each sandwich in the egg mixture first, ensuring it's fully coated, then dredge it in the graham cracker mixture, pressing gently to make sure the crumbs stick well.
