20 Golden Oreo cookies

4 tablespoons unsalted butter, melted

8 oz cream cheese, softened

1/2 cup granulated sugar

1/2 teaspoon vanilla extract

1/2 cup sour cream

1 1/2 cups fresh strawberries, hulled and diced

1/4 cup strawberry preserves

1/4 cup heavy whipping cream

Extra Golden Oreos for topping (optional)

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper for easy removal.

    In a food processor, crush the Golden Oreo cookies until they resemble fine crumbs.

      In a bowl, mix the crushed Oreos with the melted butter until well combined.

        Press the cookie mixture firmly into the bottom of the prepared baking pan to form a crust. Bake for 10 minutes, then remove from the oven and let cool.

          In another bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

            Add the sour cream to the cream cheese mixture and continue to beat until combined.

              Gently fold in the diced strawberries into the cheesecake mixture.

                Pour the cheesecake mixture over the cooled Oreo crust, spreading it evenly.

                  In a small saucepan, heat the strawberry preserves over medium heat until warm and melted. Drizzle the warm preserves over the cheesecake layer and use a knife to swirl it gently into the cheesecake.

                    Bake the cheesecake bars in the preheated oven for an additional 25-30 minutes, or until the edges are slightly golden and set.

                      Allow the bars to cool to room temperature, then refrigerate for at least 4 hours (or overnight) before cutting into squares.

                        Before serving, whip the heavy cream until stiff peaks form and dollop on top of each cheesecake bar, garnishing with extra Golden Oreos if desired.
