Ham, Egg & Cheese Croissant Sandwich

Ingredients
  

2 large croissants

4 slices of ham (preferably honey or smoked)

4 large eggs

1/4 cup shredded sharp cheddar cheese

1/4 cup spinach leaves (fresh)

1 tablespoon butter

Salt and pepper, to taste

1 tablespoon fresh chives, chopped (optional)

Hot sauce (optional, for serving)

Instructions
 

Preheat your oven to 350°F (175°C).

    Slice each croissant in half lengthwise and place them on a baking sheet, cut side up.

      In a skillet, melt the butter over medium heat. Once melted, add the spinach and sauté until wilted. Remove spinach from the skillet and set aside.

        In the same skillet, crack the eggs and fry them sunny side up, cooking for 2-3 minutes until the whites are set but the yolks remain runny. Season with salt and pepper.

          Once the eggs are cooked, layer the bottom half of each croissant with slices of ham, sautéed spinach, and shredded cheddar cheese.

            Gently place one fried egg on top of the cheese layer for each croissant.

              Cover with the top half of the croissant and place the assembled sandwiches back in the oven for about 5-7 minutes or until the croissants are warm and the cheese is melted.

                Remove from the oven and sprinkle the chives on top (if using).

                  Serve immediately, with a drizzle of hot sauce if desired.
