1 small red onion, finely chopped

2 medium tomatoes, diced

1-2 jalapeño peppers, deseeded and finely chopped (adjust for spice level)

2 tablespoons adobo sauce (from a can of chipotle peppers in adobo)

2 tablespoons fresh lime juice

1/4 cup fresh cilantro, chopped
