4 boneless pork chops (about 1 inch thick)

Salt and pepper, to taste

1 tablespoon olive oil

1 cup onion, thinly sliced

2 cloves garlic, minced

1 cup mushrooms, sliced (button or cremini)

1 teaspoon dried thyme

1 teaspoon paprika

1 cup chicken broth

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce (soy sauce for a gluten-free option)

½ cup heavy cream

Fresh parsley, chopped for garnish

Instructions
 

Start by seasoning both sides of the pork chops generously with salt and pepper.

    In a large skillet, heat the olive oil over medium-high heat. Once hot, sear the pork chops for about 4-5 minutes on each side until they are golden brown. Remove the chops from the skillet and set them aside.

      In the same skillet, add the sliced onions and cook them for about 3-4 minutes until they start to soften. Add in the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

        Stir in the sliced mushrooms, dried thyme, and paprika. Sauté until the mushrooms have released their moisture and are tender, about 5 minutes.

          Pour in the chicken broth, Dijon mustard, and Worcestershire sauce, stirring well to combine. Bring the mixture to a simmer.

            Return the pork chops to the skillet, nestling them into the sauce. Reduce the heat to low, cover, and let them simmer for about 15-20 minutes until the chops are cooked through (internal temperature should reach 145°F / 63°C).

              Remove the lid and stir in the heavy cream for a creamy finish. Allow it to simmer for an additional 2-3 minutes to thicken slightly.

                Taste the sauce and adjust the seasoning with salt and pepper if needed.

                  Serve the pork chops smothered in the creamy mushroom sauce and garnish with fresh parsley.
