1/2 cup cornstarch

1 tablespoon baking powder

1/4 teaspoon salt

1 tablespoon sugar

1/2 teaspoon ground cinnamon

1 cup sparkling water (cold)

Oil for frying (coconut or vegetable)

Powdered sugar, for dusting

Fresh mint leaves, for garnish (optional)

Instructions
 

In a large bowl, whisk together the flour, cornstarch, baking powder, salt, sugar, and ground cinnamon until combined.

    Slowly pour in the cold sparkling water, mixing gently until just combined. The batter should be thick enough to coat the back of a spoon.

      Heat about 1 inch of oil in a deep skillet or pot to 350°F (175°C).

        Dip each pineapple ring into the batter, ensuring it's fully coated, then carefully place it in the hot oil. Do not overcrowd the pan.

          Fry the fritters for about 2-3 minutes on each side, or until they’re golden brown and crispy.
