12 oz rigatoni pasta

2 cups pumpkin puree (canned or fresh)

1 cup Gruyere cheese, grated

1 cup heavy cream

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon sage, dried or fresh

1/2 teaspoon nutmeg

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup Parmesan cheese, grated (for topping)

Fresh parsley, chopped (for garnish)

Cook the Rigatoni: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes soft and translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Combine Pumpkin and Cream: Add the pumpkin puree, heavy cream, sage, nutmeg, salt, and pepper to the skillet. Stir well to combine and cook for 5-7 minutes, allowing the mixture to thicken slightly.

        Add the Cheese: Lower the heat and add in the grated Gruyere cheese. Stir continuously until the cheese melts completely and the sauce is smooth.

          Mix Pasta into Sauce: Add the cooked rigatoni to the sauce, tossing until all pasta is well coated. If the sauce is too thick, you can add a splash of pasta water to loosen it up.

            Bake for Extra Flavor (optional): Preheat oven to 375°F (190°C). Transfer the rigatoni mixture into a greased baking dish. Sprinkle the top with grated Parmesan cheese. Bake for about 15-20 minutes or until the top is golden and bubbly.

              Serve: Remove from the oven and let it cool slightly. Garnish with freshly chopped parsley before serving. Enjoy your creamy, cheesy rigatoni!
