1 cup fresh raspberries (plus extra for garnish)

2 tablespoons honey or maple syrup (adjust to taste)

1 cup almond milk (or any milk of choice)

1/4 cup chia seeds

1 teaspoon vanilla extract

1/2 teaspoon lemon juice

A pinch of salt

Instructions
 

In a blender, combine the fresh raspberries, honey (or maple syrup), almond milk, vanilla extract, lemon juice, and salt. Blend until smooth.

    Pour the blended mixture into a bowl or a jar and add the chia seeds. Stir well to combine.

      Let the mixture sit for about 5 minutes, then stir again to prevent the chia seeds from clumping together.

        Cover and refrigerate for at least 2 hours, or overnight, to allow the chia seeds to expand and create a pudding-like consistency.

          Once set, give the chia mixture a good stir. Adjust sweetness if necessary.

            Serve in individual bowls or glasses, garnished with fresh raspberries on top and a drizzle of honey or syrup if desired.
