1 box red velvet cake mix

1/2 cup (1 stick) unsalted butter, softened

1 large egg

1 cup cream cheese, softened

1 teaspoon vanilla extract

1 cup powdered sugar (for rolling)

1/2 cup chopped white chocolate or chocolate chips (optional)

A pinch of salt

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, combine the red velvet cake mix, softened butter, and egg. Mix until well combined and a dough forms.

      Add the softened cream cheese and vanilla extract to the dough. Mix until smooth and creamy.

        If using, fold in the chopped white chocolate or chocolate chips to elevate the gooeyness.

          Chill the dough in the refrigerator for about 30 minutes to make it easier to handle.

            Once chilled, use a cookie scoop (or your hands) to form about 1-inch balls of dough.

              Roll each ball in powdered sugar until fully coated, then place them on the prepared baking sheets about 2 inches apart.

                Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still slightly soft. The cookies will continue to cook as they cool.

                  Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
