8 oz orzo pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 cup heavy cream

½ cup white wine (such as Sauvignon Blanc)

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Cook the Orzo: In a large pot of salted boiling water, cook the orzo according to package instructions until al dente. Drain and set aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté for about 2-3 minutes until fragrant and the onion becomes translucent.

      Add Shrimp: Add the shrimp to the skillet, cooking for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Make the Sauce: In the same skillet, add the white wine, scraping the bottom to deglaze. Allow it to simmer for about 2 minutes. Then, add the cherry tomatoes and spinach, cooking until the tomatoes start to blister and the spinach wilts.

          Creamy Finish: Lower the heat and pour in the heavy cream. Stir well and let it simmer for another 3-4 minutes. Gradually add the Parmesan cheese, stirring continuously until it melts into a creamy sauce. Season with salt and pepper to taste.

            Combine: Add the cooked orzo and shrimp back into the skillet, tossing to coat them evenly with the sauce. If the mixture is too thick, you can add a splash of pasta water to achieve your desired consistency.
