500g chicken thighs, boneless and skinless

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper to taste

Vegetable oil for frying

4 whole wheat burger buns

½ cup mayonnaise

2 tablespoons honey

1 tablespoon sriracha sauce

1 cup shredded lettuce

1 tomato, sliced

Marinate the Chicken: In a large bowl, add the chicken thighs and pour in the buttermilk. Ensure the chicken is fully submerged. Cover and let it marinate in the refrigerator for at least 2 hours, or overnight for the best flavor and tenderness.

    Prepare the Breading: In a separate bowl, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper until well combined.

      Coat the Chicken: Remove the marinated chicken from the refrigerator. One piece at a time, let excess buttermilk drip off, then coat each piece in the seasoned flour mixture, pressing lightly to ensure it sticks. Place the breaded chicken on a plate.

        Heat the Oil: In a large, deep skillet, pour in vegetable oil to a depth of about 1 inch. Heat the oil over medium heat until it reaches 180°C (350°F).

          Fry the Chicken: Carefully add the breaded chicken pieces to the hot oil in batches. Fry for about 5-7 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 75°C (165°F). Once cooked, transfer the chicken to a plate lined with paper towels to drain excess oil.

            Make the Sticky Sauce: In a small saucepan over low heat, combine the mayonnaise, honey, and sriracha. Stir until well combined and warmed through.

              Assemble the Burgers: Toast the burger buns lightly on a skillet or grill. On the bottom half of each bun, spread a generous amount of the sticky sauce. Place the fried chicken on top, followed by shredded lettuce, a slice of tomato, and pickles. Finish with the top half of the bun.
