1 cup all-purpose flour

1/2 cup unsalted butter, softened

1/4 cup powdered sugar

1 large egg yolk

1/2 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1/2 cup heavy cream

1/4 cup granulated sugar

1 teaspoon gelatin

2 tablespoons cold water

Mint leaves for garnish

Make the Tart Shell: In a mixing bowl, combine the flour and powdered sugar. Add the softened butter and egg yolk, followed by the vanilla extract. Mix until a dough forms.

    Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

      Preheat the Oven: Preheat your oven to 350°F (175°C).

        Prepare Tartlets: Roll out the chilled dough on a lightly floured surface. Cut out circles and press them into a greased muffin tin to form tart shells. Prick the bottoms with a fork to prevent puffing.

          Bake the Shells: Bake the tart shells for 12-15 minutes or until golden brown. Remove from the oven and allow them to cool completely.

            Prepare the Mousse: In a small bowl, sprinkle the gelatin over the cold water and let it bloom for about 5 minutes. Once bloomed, gently heat the mixture for a few seconds in the microwave until dissolved (do not boil).

              Blend Strawberries: In a blender, puree the sliced strawberries until smooth. Strain through a fine mesh to remove the seeds if desired.

                Make Whipped Cream: In a medium bowl, whip the heavy cream and granulated sugar until stiff peaks form.

                  Combine Strawberry Mixture: Fold the strawberry puree into the whipped cream gently until just combined. Add the dissolved gelatin and stir until fully incorporated.

                    Fill Tartlets: Spoon the strawberry mousse into the cooled tart shells and smooth the tops with a spatula.

                      Chill: Refrigerate the tartlets for at least 2 hours, allowing the mousse to set.

                        Serve: Before serving, garnish each tartlet with fresh mint leaves and a slice of strawberry on top.
